1) What is the difference between eaux de vie de vin, brandy and cognac ?
- We often call eau de ve de vin, brandy and cognac by the same name : « brandy ».
- But the difference between the three drinks, at first glance identical, are great.
- Eau de vie de vin : fresh distlilled spirit, aged for 6 months in kegs or in large barrels.
- Brandy : This is aged eaux de vie de vin : 1 year, 2 years, etc. until 5 years for large volumes.
- Cognac : an AOC
- The rules are clear and well-defined, and summarised in a decree of the Appelation.

2) How to determine the age of cognac, brandy, or eaux de vie de vin ?
- Eau de vie de vin is a fresh product without age
- Brandy : the age of the brandy is assigned the day is bottled. Example : a two-year-old brandy has spent two years in barrels
- Cognac : the age of the cognac changes the first day of April.

3) What do the acronyms VSOP, VS and XO stand for ?
- V.S. (Very Special) or *** (Three stars) the youngest eau de vie de vin must be at least two years old ;
- VSOP (Very Superior Old Pale) the youngest eau de vie de vin must be at least four years old ;
- Napoleon : XO (Extra Old), Extra – the youngest eau de vie de vin must be at least six years old ;

4) What is the difference between brandies and eaux-de-vie de vin labelled « brut de fût » and those labelled «élaboré» ?
- Brandy marked « brut de fût » is just filtered.
- Brandy «élaboré» is a brandy at 68% or brandy which is in the process of being prepared for bottling.
